Matcha tea
The green tea plants for matcha are shade-grown for about three weeks before harvest. This slows down growth, turns the leaves a darker shade of green, and causes the production of more theanine and caffeine. After harvest the leaves are steamed, dried and then the stems and veins are removed. The last step is to stone-grind the leaves to the fine, bright green, talc-like powder known as matcha.
Matcha tea is prepared by pouring hot water (75-80 degrees) in a bowl with Matcha powder and by whisking it with a special Matcha whisk for approx. 20 seconds till it froths.
