Tea cake

A 'tea cake' is post-fermented white or green tea (mao cha) and pressed in the form of a cake. 
When talking of post-fermented tea, there is the distinction of raw - natural fermentation, or cooked - artificial fermentation. These terms refer to the treatment process that is used. The natural method is very labour intensive and the tea has to ripen after pressing it. The artificial method takes from 7 to 14 days and is often cheaper. The longer the post-fermented tea ripens, the higher the quality and price. Apart from the traditional post-fermented tea there is now also the white tea cake. Rising in popularity: young tea buds that dry in the sun and are pressed, nothing else!

One of the most well-known and most expensive post-fermented tea types is Pu Erh. Already in the Tang Dynasty (618 AD - 907 AD) Pu Erh tea was mentioned. Pu Erh is produced in Pu Erh in Yunnan province in China. Pu Erh can only be called Pu Erh if the tea is really dried and processed within the area (as described in the Yunnan Geographical Indication) of Yunnan. The leaf also has to be of the variety Da Ye. 
 
This organic cake was pressed 2016 in Yunnan and originates from the tea plant: Chang Ye Bai Hao.

Steeping instructions Pu Erh:
The Western way (tea pot):
Break off a piece of the cake, use water of 100 degrees and rinse the tea twice - you do this by pouring hot water on the tea and immediately throwing the water again. Then steep for about 3 minutes.
 
The Eastern way:
Break off a piece of the cake, use water of 100 degrees and rinse the tea twice. Steep very briefly for 15-30 seconds the first infusions and then once or twice more longer.

This special organic tea cake originates from Pu Erh (Pu'er), Yunnan province in China.
Pu Erh has been the commercial centre of tea since the Song Dynasty and in 2003 Pu Erh was proclaimed a protected trade mark. This means that tea can only carry the name Pu Erh if the tea genuinely is from Pu Erh. Tea from Pu Erh is of high quality and is famous in China because of its name.
This cake was pressed in 2016 and comes from the tea plant Yun Kang No.10.

A top quality 100 gram white tea cake of the tea plant Fuding Dabaihao from the Fujian (Ningde) in the province Zhejiang. Fuding is one of the biggest production areas of white tea. In 2005 Fuding city was proclaimed as the birth city of white tea.
