Yellow tea is very special not only because of the quantity of antioxidants but also because of the interesting preparation process.
After frying the tea leaves to stop the oxidation process, the leaves are wrapped in soft cloths to lightly ferment.
This process is repeated until the yellow tea has developed its unique flavour.
